The Best Quinoa Salad You Will Ever Eat {Recipe}

I'm kind of a dumbass when it comes to food.

I'll make something that is so delicious I want to eat it every day for the rest of my life, then I'll immediately forget and not make it again for a year.

Then I'll make it and think, "What the HELL is WRONG with me?!?! Why am I not making this every day for the rest of my life?!?!"

Such is the case with quinoa.

I did BBQ stuffed peppers (with quinoa) a few times last summer and it was SO good.

I haven't had quinoa since.

Until this past weekend when I finally decided to tear into the 2 pound bag of quinoa I picked up at Costco a couple months ago.

And now I am going to eat it every day for the rest of my life.

If you would like to make The Best Quinoa Salad ever, here's what you'll need:
  • Quinoa (duh)
  • Feta (NOTHING goes better with quinoa than feta)
  • Bell pepper (any color you wish)
  • Cucumber
  • Red onion
  • Romaine lettuce (or any greens: kale, spinach, etc)
  • Avocado
  • Italian dressing (homemade or store bought)
  • Stock (to cook your quinoa. I chose veggie stock since I wasn't putting meat in this salad.)

First, cook your quinoa.

(If you don't know how to do this, it's kinda like rice. One part quinoa, two parts liquid, bring to a boil, cover, turn heat to low, simmer for 15, let sit for 5, done!

I guess it's EXACTLY like rice....)

Chop-slash-dice all your veggies (Except the avocado and the greens. Unless you like soggy lettuce. Which I do not.) and toss it all in a bowl. I somewhat finely mince the red onion as I don't like BIG onion chunks. Crumble up the feta a toss that in the bowl, too.

Let your quinoa cool, then add it to the bowl, pour in your dressing, mix well and let everyone get acquainted in the fridge for an hour or more.

Then dish that shit up and top with diced avocado.
